Ingredients

Shaved Mushroom Salad

12 gal pieces or slices + 2 qt pieces or slices   Fresh Sliced Mushrooms, RTU
¾ cup   Olive Oil
¼ cup   Lemon Juice, Reconstituted
1 tbsp   Salt
1 tbsp ground   Black Pepper
¾ cup   Parmesan Cheese, grated
½ cup   Fresh Parsley
1 quart sliced   Red Bell Peppers, Fresh

Shaved Mushroom Salad Directions

  1. Pre-Prep: Clean and sanitize work station. Pull ingredients and place at station.
  2. Prep: in measuring cup, whisk together liquids. Whisk in seasonings. Pour over mushrooms in food safe storage container. With gloves on toss mushrooms and dressing. Then toss with parmesan cheese. Toss in parsley and red bell peppers.
  3. Hold: Refrigerate overnight.
  4. Serve: serve ½ cup on line or offer on your salad bar.
