Ingredients
Spring Salad Mix
3 lbs 2 oz Baby spinach, fresh |
4 lbs 3 oz Romaine lettuce, chopped |
2 ¼ cup Red onion, julienned |
8 ⅓ cup Strawberries, thawed and drained |
4 ¼ cups Mandarin oranges, drained |
Spring Salad Mix | Dressing
¾ cup + 1 ½ tsp Lemon juice |
1 cup + 2 tbp White wine vinegar |
2 tbsp + 2 ⅓ tsp Poppy seeds |
2 ¾ cups Sugar |
2 tbsp + 2 ⅓ tsp Vegetable oil |
Spring Salad Mix Directions
- Mix together the onions, strawberries and mandarin oranges. Store in cooler until ready to use.
- Using a whisk, mix together the lemon juice, vinegar, poppy seeds, sugar, and vegetable oil.
- Combine the lettuce and spinach.
- Just before serving, toss lettuce mixture with dressing. Turn into serving bowl and top with fruit mixture.
